Steamed Sticky Glutinous Rice With Chicken aka Lo Mai Gai 糯米鸡




Steamed Sticky Glutinous Rice With Chicken aka Lo Mai Gai 糯米鸡 - A classic Dim Sum dish and these are the comfort food of many especially those residing in Singapore and Malaysia. The recipe shared in this blog post is the Malaysian style Lo Mai Gai. So tasty, moist and flavourful. 



I started my first experiment making Lo Mai Gai in August 2014. That was after I saw a friend posted a photo of Lo Mai Gai on Facebook. I was tempted because I love Malaysian style Lo Mai Gai that is dark in colour that I couldn't find in Singapore. The very dark soy sauce added in the Lo Mai Gai gives a unique flavour to this dish. 



My first attempt in year 2014.

Ingredients & Method: (Yield 3 servings)

Prepare the rice:

130g Glutinous Rice

(A) Seasoning:

1/4 tbsp Dark Soy Sauce

1/2 tbsp Soy Sauce

1/2 tsp Sesame Oil

1/2 tbsp Oyster Sauce

1/4 tsp Salt



1. Wash and soak glutinous rice at least 4 hours or overnight.

2. Drain. Stir in seasoning (A). Set aside.




Prepare the chicken:

70g Boneless Chicken Meat (cut into chunks)

2 small Shiitake Mushroom (or 1 large mushroom, cut into chunks)

(B) Seasoning: 

1 tsp Fresh Ginger Juice

1 tsp Oyster Sauce

1 tsp Soy Sauce

1 tsp Dark Soy Sauce

1/2 tsp Sugar

1 tsp Sesame Oil



-------------------------------------------

3 Slices Chinese Sausage 腊肠 

3 cloves of Garlic (Finely chopped, divide into 2 portions)

1 tbsp Chopped Spring Onion 

Some oil for cooking

1 tsp Corn Flour (mix with 2 tsp water)

Some shallot oil/ sesame oil to grease the ramekins

150ml Hot Water, do adjust the amount to your preference

3. Place the chicken chunks and mushrooms in a bowl, pat dry with kitchen towels. Add in all seasoning (B) and mix well. Marinate at least 2 hours or overnight. 





4. Heat oil in a skillet, add in 1 portion of garlic followed by spring onion, fry until fragrant. Add in chicken meat and mushrooms, reserve the marinades. Stir fry until almost cooked, add in marinades and corn starch solution. Mix to combine. When the sauce has thickened, remove it from heat.




5. Heat oil in a skillet, add in the remaining garlic and fry until fragrant. Add in the glutinous rice. Stir fry until no more sizzling sound. Remove from heat.










Prepare for steaming:

6. Lightly grease 3 ramekins with shallot oil/ sesame oil. In each ramekin, place a slice of chinese sausage, some mushrooms and chicken chunks. Layer with glutinous rice and add hot water (about 50ml each). Cover with aluminium foil, steam for 40 minutes or until cooked through.

If you do not want to use aluminium foil,
alternatively you can use stainless steel bowl with cover.

7. To serve: Place a plate on the ramekin, secure both sides and turn upside down, the steamed glutinous chicken rice will 'drop' out nicely. Serve right away.

Honey Garlic Baby Back Ribs 蜜汁蒜香猪小排


Honey Garlic Baby Back Ribs 蜜汁蒜香猪小排 - Succulent, tender, and delicious baby back ribs marinated in the flavourful sweet and savoury seasonings. Can be done in an oven or an air fryer. Both methods work perfectly.

Ingredients: 材料

500g Baby Back Ribs 排骨 500克


Marinade: 腌料

4 cloves Garlic (crushed) 蒜头 4颗,压成蒜茸

1tsp Grated Ginger 姜蓉 1小匙

Pinch of Garlic Pepper/ Black Pepper 大蒜胡椒或黑胡椒 少许

Pinch of Chinese Five Spice 五香粉 少许

1 1/2 tbsp Hoisin Sauce 海鲜酱 1 1/2 汤匙

1 1/2 tbsp Soy Sauce 酱油 1 1/2 汤匙

3 tbsp Honey 蜜糖 3汤匙

Toasted Sesame Seeds for garnishing 芝麻 适量

Method: 步骤

1. Mix all marinade ingredients in a bowl (reserve 1/3)

2. Dip and coat the ribs with marinade. Cover and keep in the refrigerator. Let marinate for at least 6 hours or preferably overnight. 
加入排骨,盖好,放进冰箱腌隔夜。

3. Cook in air fryer 气炸方法: Preheat Ninja Foodi 180'C for 3 minutes. Place the ribs on the air fryer pan. Cook for 8 minutes.
放进气炸锅,气炸 8分钟。

4. Baste the ribs with the reserved sauce, and continue to cook for 7 minutes.

5. Oven grilled method 烘烤方法Transfer the ribs to a deep baking dish.




Bake in a preheated oven 200'C for 20 minutes.
将排骨放在烤盘,放在烘炉的下层,200度烤20分钟。

Baste with the reserved marinade. 






Flip over, bake another 10 minutes. 

涂上酱汁,把排骨翻过来。烤10 分钟。

Reset oven temperature to 220'C, flip over the ribs, transfer to rack 4, bake for 5 minutes.

把排骨放在上层,220 度烤 5 分钟。

Remove from oven, garnish with toasted sesame seeds, let it sit for 10 minutes before serving.

Pear with Chinese Almond Soup 南北杏雪梨水


When I cook this, that means someone in my house is coughing... Chinese believed there are 3 types of cough: cold cough, heat cough and dry cough. Hmm..... I do not know exactly how to diagnose the type of cough....but, based on my past experience taking cake of my boy, I have some conclusions:

1. When he cough with green/yellowish thick phlegm - my diagnosis is Heat Cough
2. When he cough at night only: my diagnosis is Cold Cough
3. When he only cough in the morning without phlegm - my diagnosis is Dry Cough

Very important note: Don't use the above as your guideline, the above diagnosis have no scientific proof, those were based on my past experience taking care of my son. It may only works for my son.

My best remedy for heat cough and dry cough is PEAR. I like to use home remedy for cough because everyone knows, cough medicine is not good for kids. 

Pear with chinese almond....I used to cook this with honey dates which is very effective for heat cough but my boy didn't like it. Today I cooked it with figs which I like more, but my boy didn't like it either... hahaha....he never like any double boiled dessert or drinks :)

3 Pears
Handful of Chinese Almond
3 Figs
Some rock sugar to taste
Hot Water (enough to cover all the ingredients)

Method:
1. Place everything (except rock sugar) in a slow cooker/ double boiler. Cook at least 4 hours. 




2. Add rock sugar to taste. Cook another 30 minutes.
3. Serve warm or chilled.

Chocolate Soft Serve Ice Cream, just banana and cocoa powder


It's been a very long time I never make ice cream with frozen bananas. 

This the ice cream that I used to make for my boy when he was smaller. He liked this a lot before I made ice cream with cream for him. I used to make this with the over ripe bananas because last time I don't have an oven to make dessert or bread with bananas. So, this was the easiest way for me to used up the over ripe bananas.

Yeah...it looks funny right...Shhh...don't say the word... hahaha... I never fill this ice cream on a ice cream cone before, I normally poured it into a cup for him. 

This morning was a cold rainy morning and the ice cream didn't melt as fast as it usually does. So I filled it in a piping bag and tried to fill it on a ice cream cone. Just found it funny and post the picture to my archives because my boy is no longer like this ice cream. I think I would never make this again. But, If you have young toddlers at home, go for this healthy ice cream instead of the one made with thickened cream. :)

2 Frozen Banana

5tbsp Cocoa Powder 

Method:

1. Blend all ingredients in a food processor. 

Rabbit Pie... with grouper fish and vegetables in japanese curry





Brer Rabbit: Fry me, boil me, bake me in a pie


Yeap... The Brer Rabbit & The Blackberry Bush story....One of my boy's favorite story before bedtime. After a long drag upon his request for 'Rabbit Pie', I finally made it today. 

I never bake a pie before so i did some research online....the more I read, the less confident i have to make the pie filling. Not that I do not know how to make the filling based on the recipe, my biggest challenge is to make my boy eat it! He never like western food, never like pie either! 

So I had made up my mind not to cook the creamy filling.... I thought of 2 ways of making it. Use the instant chicken cream or instant japanese curry. I let him choose his flavor. Yeah...Japanese Curry is always his preference. Added some potato, carrot and fresh grouper in it. It turned out better than I had expected, I mean the taste of the curry and pastry, not the rabbit ears..hahaha..

Well, the rabbit ears were not really looks like what they supposed to look like. I first shaped a big and long rabbit ears just like the one in the story book. But...... it couldn't stand alone on top even with the baby corn can't hold it in shapes. So I trimmed it smaller and smaller and smaller....and that's it! Only left 2 skinny ears! hahaha... I will make this again someday, perhaps I'll bake the ears separately.... Like what my sister in law always say to me: Practice makes perfect! I definitely need more practice on this :)

My little helper made this with me today. He mashed the carrot and potato that he said he will never eat them! 

The one on the right, my boy said he needs something black to make rabbit eyes...So I gave him 4 chocolate chips for the eye balls (2 on each pie, that's what I thought). Hahaha...He put all 4 on his pie!

2 Grouper Fish Fillet

Pinch of Salt 

Pinch of Pepper

1 pkt Instant Japanese Curry or home cooked Japanese Curry

1 Puff Pastry (thawed to room temperature)

Some steamed potato and carrot, cut into chunks/ mashed

About 50ml Water

Egg lightly beaten for egg wash


Method:


1. Season the fillet with very little salt and pepper. Let marinate for 15 minutes.

2. Steam the fish for 10 minutes. Use a fork, cut into big chunks. 

3. In a ramekin, place the carrot and potato on the bottom. 

4. In a bowl, stir in 50ml water into the instant curry. Mix well.

5. Pour the curry into the ramekin. Gently stir. Add in fish fillet. Gently press the fillet into the curry.



6. Cut pastry into square slightly bigger than the ramekin. Place the puff pastry on top and press on the edges. Make 2 slits on the pastry. Egg wash. Bake in preheated oven 180'C (middle rack) for 25-30 minutes. 



Tips:
If serving for kids, it's best to pour the filling on a plate because the curry is extremely HOT!

Ribena Ice Cream


We like everything with Ribena.... Ribena SmoothieRibena Marshmallow CakeRibena Cheesecake or even mix it with parfait . This time, I mixed it with whipping cream and made the Ribena Ice Cream....Yes, it's good! My boy and I finished all in a day... 

I'll stop making ice cream with cream for a while as this is not really a very healthy food...I'll go with what I used to make...made with frozen fruits only... :)

150ml Whipping Cream
5 tbsp Ribena Blackcurrant & Apple Cordial




Method:
1. Whip up the cream until soft peak form. Do not over-whip the cream.
2. Fold together the whipped cream and Ribena cordial. 
3. Cover and freeze overnight. To serve, remove from freezer and let it soften for 3-5 minutes before scoop out the ice cream.

Tomato Fried Egg/ Tomato Egg Stir-Fry 番茄炒蛋

  

{Year - 2014} My boy didn't like tomatoes, not one little bit. Well, I just do not want him to be picky about food, so whatever food I think is good for him, I'll think of ways to get him to eat it. :) 

When he saw me cooking this dish in the kitchen, the first thing he told me was 'Mommy, don't put tomato, I will not eat tomato'. Then I said 'It's okay if you don't eat the tomatoes, just eat the fried eggs, okay?' Hahaha.... yeah, he only ate the fried eggs and gravy, he told me he liked the fried eggs a lot, just didn't like the tomatoes.... the end of the day, still telling me that he didn't like the tomatoes. Hey boy, the fried eggs wouldn't taste so good without the tomatoes!


Ideal for bento. Still no tomatoes for the tomato-hater:P

以番茄和鸡蛋为主要食材的家常菜。咸中带甜酸味,是一道色香味俱全,大小朋友都爱的开胃佳肴。营养价值高,具有抗衰老的作用。


Ingredients: 材料

1 Tomato (cut into chunks), sprinkle some sugar set aside
番茄 1粒,切块

2 Egg (add a pinch of salt, lightly beaten, do not overbeat the egg)
鸡蛋 2粒 (加一点盐,稍微打散)

1-2 Stalk Spring Onion (chopped, reserved some for garnishing)
青葱 1条,切碎





Sauce: 酱汁

About 1 tbsp Soy Sauce
酱油 大概1汤匙,自己试试味道再调味。


1/2 tbsp Sugar
细砂糖 半汤匙


1/2 tbsp Ketchup
番茄酱 半汤匙


Some Sesame Oil
麻油 适量


Some Water
水 适量

Method:步骤

1. Heat oil in a skillet, fry egg into big chunks until 'just cooked'. Remove from heat, set aside.
烧热油,把鸡蛋以大火快速煎至刚熟(半煎炒,可以看下面的视频参考做法)。离锅。



2. Heat oil in a skillet, add spring onion and cook until fragrant. Add in tomato. Stir fry until tomatoes are soft or until no more sizzling sound. Add sauce and cook on medium-low heat until the gravy started to thicken. 
烧热油,加入一半的葱碎,爆香。加入番茄,炒至水份蒸发。加入酱汁,转中小火煮至酱汁开始浓郁。

3. Stir in fried eggs and combine. Cook for another 1 minute. Serve warm.
加入已煎好的鸡蛋,煮至收汁即可。


Tips: 小贴士

1. Fried egg with high heat. Do not overcook the eggs.
煎蛋要用热油,大火,煮至刚熟即可。煮太久的话,鸡蛋会变硬,就不好吃了。

2. Add some sugar to the tomato to make it less sour. 
番茄切好后撒些细砂糖拌均,可以减少番茄的酸味。

3. If you like a "glossy" finish, stir in some corn starch solution (water + corn flour) to thicken the sauce.
