Malaysian Style Glutinous Chicken Rice..Loh Mai Guy 马来西亚版的糯米鸡




Few weeks ago, a friend of mine posted a photo of the Loh Mai Guy that she enjoyed in Malaysia, my hometown. Yes, we malaysian love the unique local flavor of this food. The very DARK dark soy sauce with the juicy steamed chicken and sticky glutinous rice. My all times favorite but ever since I moved to singapore, I can't get the Malaysian style Loh Mai Guy here. Although I love Singapore food too, but this is taste that I ate since childhood, it's unbeatable!

Ohh...when I saw my friend's post, it was so tempting...and she suggested why not I make my own? Yeah... from that day onwards, I was thinking to make or not to make..undecidable because I worried that my boy may not like it. He is too used to Canton and Japanese food.


Today, after I sent my boy to kindergarten, I had been wandering around in the supermarket about 30 minutes. I had no idea of what to cook for dinner. After 30 minutes shopping I only bought a bunch of bananas...hahaha...what a waste of time...Until I walked to the market and saw the fresh chicken legs...I finally decided to make it today. I was so happy that it was a successful one that my boy likes it a lot. When he first saw the Loh My Guy, he said he doesn't like it, but after one bite, eating non-stop hahaha....



I made 2 today, upsize for myself and a small one for my boy...but I only get to eat half..My boy ate most of it :)



Updated 30 January 2015, I finally have time to draft out this recipe. It's not simple, but worth the time spent! The best thing is...I can prepare this ahead of time. Next time when my boy go primary school, I guess this will be his regular school snack! ;)

To prepare the rice:

100g Glutinous Rice



(A) Seasoning:

1/4 tbsp Dark Soy Sauce

I use this..very DARK dark soy sauce. 

1/2 tbsp Soy Sauce
1/2 tsp Sesame Oil
1/2 tbsp Oyster Sauce
1/4 tsp Salt


1. Wash and soak glutinous rice at least 4 hours or longer. 
2. Drain. Stir in seasoning (A). Set aside.


Ignore the quail egg, that's my boy special request.



To prepare the chicken:



1/2 Boneless Chicken Leg (or less if you don't like it too MEATY, cut into chunks)
2 Shiitake Mushroom (choose smaller one or 1 large mushroom cut into 2)

(B) Seasoning: If you like mild flavor or preparing for young children, reduce seasoning into half

1 tsp Fresh Ginger Juice
1 tsp Oyster Sauce
1 tsp Soy Sauce
1 tsp Dark Soy Sauce
1 tbsp Sugar
1 tsp Sesame Oil

2 Slices Chinese Sausage 腊肠 
2 cloves of Garlic (Finely chopped)
Some Spring Onion (Finely Chopped)
(Optional, the pictures shown in this blog is without spring onion. I forgot to put lol..)
Some oil for cooking
1 tsp Corn Flour (mix with 2 tsp water)



3. Place the chicken chunks and mushrooms in a bowl (Dry with kitchen towels). Add in all seasoning (B) and mix well. Marinate at least 2 hours. The longer, the tastier. I marinate this when I soak the glutinous rice.
4. Heat oil in a skillet, add garlic and spring onion(if using), fry until fragrant. Add in chicken mixture (reserve the sauce). Stir fry until cooked. Add in sauce and corn starch. Mix to combine until the sauce is thicken. Remove from heat.
5. Heat oil in a skillet, add garlic and fry until fragrant. Add in the seasoned glutinous rice. Stir fry until no more sizzling sound (but not crispy!). Remove from heat.




To prepare for steaming:

6. Lightly grease 2 bowls or aluminium foil cups with sesame oil, in each bowl/ cup, place a slice of chinese sausage, 1 mushroom and some chicken chunks as many as you like. Add in seasoned glutinous rice and add hot water (about 70ml each). Steam for 40 minutes or until cooked through.

7. To remove the rice, place a plate on the bowl. Secure both sides and turn upside down. As shown in the pictures below. By default, it will 'drop' out nicely :) Enjoy!

Honey Garlic Baby Ribs


I wanted to cook this for quite some times, just do not have the initiative to thaw the frozen baby ribs. Yeah...I used frozen ribs, not the one selling in the market. This is the premium ribs that 'I' believed is more tender and of course better quality. 

Today was a rainy lazy day..... no mood to bake anything or shopping for groceries. So I dug my fridge and found this in the freezer. And without other option, I cooked this for dinner. 



When I unpacked the ribs, it took me 15 seconds to read these words...my mind was zzz...I need some rest

500g Baby Ribs (Cut)

Seasoning:
4 cloves Garlic (crushed)
1tsp Grated Ginger
Pinch of Garlic Pepper
Pinch of Chinese Five Spice
1 1/2 tbsp Hoisin Sauce
1 1/2 tbsp Soy Sauce
3 tbsp Honey

Sesame 

Method:
1. Mix all seasoning in a bowl. 



2. Dip the ribs with the seasoning and place in a clean container. Cover and keep in refrigerator. Let marinate for at least 2 hours. Today I marinate for 5 hours. 





3. Place the ribs on the Tefal Actifry pan. Reserve the excess sauce. Cook for 5 minutes.



4. Add some sesame into the sauce. Pour the sauce on the ribs, continue to cook for another 6 minutes. 







Well, this was my first attempt and I do not know how would it turn out. So I cooked some soy sauce fried noodles as 'back up food' just in case my recipe failed. Hahaha...I'm glad that this recipe was a successful one. :) 





Pear with Chinese Almond Soup 南北杏雪梨水


When I cook this, that means someone in my house is coughing... Chinese believed there are 3 types of cough: cold cough, heat cough and dry cough. Hmm..... I do not know exactly how to diagnose the type of cough....but, based on my past experience taking cake of my boy, I have some conclusions:

1. When he cough with green/yellowish thick phlegm - my diagnosis is Heat Cough
2. When he cough at night only: my diagnosis is Cold Cough
3. When he only cough in the morning without phlegm - my diagnosis is Dry Cough

Very important note: Don't use the above as your guideline, the above diagnosis have no scientific proof, those were based on my past experience taking care of my son. It may only works for my son.

My best remedy for heat cough and dry cough is PEAR. I like to use home remedy for cough because everyone knows, cough medicine is not good for kids. 

Pear with chinese almond....I used to cook this with honey dates which is very effective for heat cough but my boy didn't like it. Today I cooked it with figs which I like more, but my boy didn't like it either... hahaha....he never like any double boiled dessert or drinks :)

3 Pears
Handful of Chinese Almond
3 Figs
Some rock sugar to taste
Hot Water (enough to cover all the ingredients)

Method:
1. Place everything (except rock sugar) in a slow cooker/ double boiler. Cook at least 4 hours. 




2. Add rock sugar to taste. Cook another 30 minutes.
3. Serve warm or chilled.

Chocolate Soft Serve Ice Cream, just banana and cocoa powder


It's been a very long time I never make ice cream with frozen bananas. 

This the ice cream that I used to make for my boy when he was smaller. He liked this a lot before I made ice cream with cream for him. I used to make this with the over ripe bananas because last time I don't have an oven to make dessert or bread with bananas. So, this was the easiest way for me to used up the over ripe bananas.

Yeah...it looks funny right...Shhh...don't say the word... hahaha... I never fill this ice cream on a ice cream cone before, I normally poured it into a cup for him. 

This morning was a cold rainy morning and the ice cream didn't melt as fast as it usually does. So I filled it in a piping bag and tried to fill it on a ice cream cone. Just found it funny and post the picture to my archives because my boy is no longer like this ice cream. I think I would never make this again. But, If you have young toddlers at home, go for this healthy ice cream instead of the one made with thickened cream. :)

2 Frozen Banana

5tbsp Cocoa Powder 

Method:

1. Blend all ingredients in a food processor. 

Rabbit Pie... with grouper fish and vegetables in japanese curry





Brer Rabbit: Fry me, boil me, bake me in a pie


Yeap... The Brer Rabbit & The Blackberry Bush story....One of my boy's favorite story before bedtime. After a long drag upon his request for 'Rabbit Pie', I finally made it today. 

I never bake a pie before so i did some research online....the more I read, the less confident i have to make the pie filling. Not that I do not know how to make the filling based on the recipe, my biggest challenge is to make my boy eat it! He never like western food, never like pie either! 

So I had made up my mind not to cook the creamy filling.... I thought of 2 ways of making it. Use the instant chicken cream or instant japanese curry. I let him choose his flavor. Yeah...Japanese Curry is always his preference. Added some potato, carrot and fresh grouper in it. It turned out better than I had expected, I mean the taste of the curry and pastry, not the rabbit ears..hahaha..

Well, the rabbit ears were not really looks like what they supposed to look like. I first shaped a big and long rabbit ears just like the one in the story book. But...... it couldn't stand alone on top even with the baby corn can't hold it in shapes. So I trimmed it smaller and smaller and smaller....and that's it! Only left 2 skinny ears! hahaha... I will make this again someday, perhaps I'll bake the ears separately.... Like what my sister in law always say to me: Practice makes perfect! I definitely need more practice on this :)

My little helper made this with me today. He mashed the carrot and potato that he said he will never eat them! 

The one on the right, my boy said he needs something black to make rabbit eyes...So I gave him 4 chocolate chips for the eye balls (2 on each pie, that's what I thought). Hahaha...He put all 4 on his pie!

2 Grouper Fish Fillet

Pinch of Salt 

Pinch of Pepper

1 pkt Instant Japanese Curry or home cooked Japanese Curry

1 Puff Pastry (thawed to room temperature)

Some steamed potato and carrot, cut into chunks/ mashed

About 50ml Water

Egg lightly beaten for egg wash


Method:


1. Season the fillet with very little salt and pepper. Let marinate for 15 minutes.

2. Steam the fish for 10 minutes. Use a fork, cut into big chunks. 

3. In a ramekin, place the carrot and potato on the bottom. 

4. In a bowl, stir in 50ml water into the instant curry. Mix well.

5. Pour the curry into the ramekin. Gently stir. Add in fish fillet. Gently press the fillet into the curry.



6. Cut pastry into square slightly bigger than the ramekin. Place the puff pastry on top and press on the edges. Make 2 slits on the pastry. Egg wash. Bake in preheated oven 180'C (middle rack) for 25-30 minutes. 



Tips:
If serving for kids, it's best to pour the filling on a plate because the curry is extremely HOT!

Ribena Ice Cream


We like everything with Ribena.... Ribena SmoothieRibena Marshmallow CakeRibena Cheesecake or even mix it with parfait . This time, I mixed it with whipping cream and made the Ribena Ice Cream....Yes, it's good! My boy and I finished all in a day... 

I'll stop making ice cream with cream for a while as this is not really a very healthy food...I'll go with what I used to make...made with frozen fruits only... :)

150ml Whipping Cream
5 tbsp Ribena Blackcurrant & Apple Cordial




Method:
1. Whip up the cream until soft peak form. Do not over-whip the cream.
2. Fold together the whipped cream and Ribena cordial. 
3. Cover and freeze overnight. To serve, remove from freezer and let it soften for 3-5 minutes before scoop out the ice cream.

My boy didn't like tomato, not one little bit. Well, I just do not want him to be picky on food, so whatever food that I think it's good for him, I'll think of ways to get him eat it. :) 

When he saw me cooking this in the kitchen, the first thing that he told me was 'Mommy, don't put the tomato, I will not eat the tomato'. Then I said 'it's ok if you don't eat the tomato, just eat the fried eggs, okay?' hahaha.... yeah, he only ate the fried eggs and gravy, he told me he likes the fried eggs a lot, just didn't like the tomato....end of the day, still telling me that he didn't like the tomato. Hey boy, the fried eggs wouldn't taste so good without the tomatoes!


Ingredients: 材料


1 Tomato (cut into chunks), sprinkle some sugar set aside
番茄 1粒,切块

2 Egg (optional: add a pinch of salt, lightly beaten, do not over beat the egg)
鸡蛋 2粒 (加一点盐,稍微打散)

1-2 Stalk Spring Onion (chopped, reserved some for garnishing)
青葱 1条,切碎





Sauce: 酱汁

About 1 tbsp Soy Sauce
酱油 大概1汤匙,自己试试味道再调味。


1/2 tbsp Sugar
细砂糖 半汤匙


1/2 tbsp Ketchup
番茄酱 半汤匙


Some Sesame Oil
麻油 适量


Some Water
水 适量

Method:步骤

1. Heat oil in a skillet, fry egg into big chunks until 'just cooked'. Remove from heat, set aside.
烧热油,把鸡蛋以大火快速煎至刚熟(半煎炒,可以看下面的视频参考做法)。离锅。



2. Heat oil in skillet, add spring onion and cook until fragrant. Add in tomato. Stir fry until tomatoes are soft or until no more sizzling sound. Add sauce and cook in medium-low heat until the gravy started to thicken. 
烧热油,加入一半的葱碎,爆香。加入番茄,炒至水份蒸发。加入酱汁,转中小火煮至酱汁开始浓郁。

3. Stir in fried eggs and combine. Cook for another 1 minute. Serve warm.
加入已煎好的鸡蛋,煮至收汁即可。


Tips: 小贴士

1. Fried egg with high heat. Do not overcook the eggs.
煎蛋要用热油,大火,煮至刚熟即可。煮太久的话,鸡蛋会变硬,就不好吃了。

Mr. Snail Custard Potato Bun 卡斯塔马铃薯面包














I wanted to make this snail bun for quite some times already...Yeah...just because my boy likes it. That's always the same reason.... He likes to watch the baby tv Mr. Snail show.Whenever I say 'Hey Snaily', he giggled.

This is just an ordinary soft potato bread recipe with custard topping but I do not like it to look boring... The very boring 9pcs bun with custard crossed on top. If I made that, he may not like it much.

I like to make something that he can't get it else where....a good piece of memory next time when he grew up. The very unique and special bread that mommy made for him. :)

He ate 3 today...and I'm glad that he likes it a lot. After dinner, I let him 'decorate' the bun with the leftover chocolate that I used in the afternoon. Here's how's the snaily looks like after my boy 'decorated' it...hahaha..he just wanted to squeeze all the chocolate out...he likes chocolate!

Bread 面包材料:

250g Bread Flour
高筋面粉 250克

50g Mashed Potato
马铃薯泥 50克

50g Brown Sugar
黄砂糖 50克

70g Fresh Milk
鲜奶 70克

50g Whipping Cream
鲜奶油 50克

1/4 tsp Salt
盐 1/4 小匙

1 tsp Instant Yeast
即溶酵母 1 小匙(满)

30g Unsalted Butter
牛油(无盐,室温) 30克

Custard Topping 卡斯塔材料:

1 Egg Yolk
蛋黄 1 个

65g Fresh Milk
鲜奶 65克

10g Brown Sugar
黄砂糖 10克

15g Bread Flour
高筋面粉 15克


Method:

Custard Topping 卡斯塔做法:

1. Mix all ingredients in a bowl. Strain and cook with low heat in a saucepan. Keep stirring and when the mixture is thicken, remove from heat. 

2. Transfer to a bowl. Cover with cling wrap and refrigerate for at least 1 hour.

3. Transfer to a piping bag and make topping as desired.

将所有材料搅拌均匀,过筛。用小火边煮边搅拌成糊状 (看下图)。熄火,盖上。待凉后装进挤花袋,放进冰箱。







Bread 面包做法:

1. Mix all ingredients except butter. 
除了牛油,将所有材料搅拌成面团。

2. When all ingredients come together, knead in butter. Continue kneading until the dough passes the membrane test.
加牛油,将面团搓至光滑有弹性。拉开时能拉出薄膜即可。看下图。


The dough is 'elastic' at this stage
3. Place in a greased bowl, cover with cling wrap and let it proof doubled in size. About an hour.

将面团放入已涂油的碗,用保鲜纸盖上。发酵至双倍大,大概1 小时。



4. Deflate and divide dough to make 9 balls, about 60g each. Let it rest for 15 minutes. Shape as desired. Proof double in size. About 45 minutes. Egg wash and add custard topping.

用手按压面团,挤出空气。分割成9份,每份大概60克。用保鲜纸盖好,静置15分钟。随意造型后,放置烤盘上,用保鲜纸盖好,发酵至双倍大,大概45分钟。涂些蛋液后把卡斯塔随意挤在面团上。可以看图参考做法。




5. Cook in Tefal Actifry until brown or bake in a preheated oven 170'C for 15 minutes.
