Cranberry Oatmeal Cookie Bars 蔓越莓果酱燕麦饼干












Do they looks good? Yes, they looks good! 
Do they taste good? Yes, they are delicious. 
Are they healthy? hmm.... if you think butter is healthy, then YES, these are healthy snack. Or at least healthier than store bought cookies that loaded with so many food additives with some names that I can't even pronounce. Yeah... I always read label before I buy snack for my 5 year old son. No junk food for him of course but sometimes even food that we think is 'healthy' but when you read the label, you may want to put it back on the shelf. 

This recipe is very easy and foolproof, I think. This is my first attempt making it. Basically just mix everything together, spread on the pan and bake. I used Homemade Cranberry Jam because I wanted to use up the not-so-tasty fresh cranberries. If any of you happened to read my blog here and wanted to try this recipe, you can replace the homemade cranberry jam with any other jam or Nutella...yeah, my boy asked me to put chocolate fillings next time :D

(A)
1/2 cup Brown Sugar
1 cup All Purpose Flour
1/4 tsp Baking Soda
1/8 tsp Salt
1 cup Rolled Oat

114g Unsalted Butter (softened)
200g Cranberry Jam

Method:
1. Preheat oven 175'C. Line baking pan(I use my swiss roll pan 33cm x 23cm) with parchment paper.



2. Mix (A) together. Rub in softened butter with hand to make crumbly mixture.






3. Press 2 cups of crumbs onto the bottom of the pan with the back of the spoon.




4. Spread the jam to within 5-10mm of the edge.





 5. Sprinkle remaining crumbs and gently press into the jam.



6. Bake 30-35 minutes (rack 2 or 1 rack below middle rack) until lighty brown. 



7. Remove from oven and let it cool before cut into bars.
