Steamed Hidden Treasure Egg Tofu 蒸藏宝豆腐






When my son was a toddler, I used to steamed tofu (aka bean curd) for him to eat with rice. A good source of protein, soft and easy to digest for the little stomach. Added some root vegetables to make it nutritious and higher fibre, thus it's named 'Hidden Treasure Tofu'.

好几年前,孩子还小,对蔬菜特别选吃,我就想了这道藏宝豆腐,把蔬菜切丝/切碎,加入豆腐,虾和肉碎一起蒸。味道清淡但相当美味。可以依自己喜欢的口味加入不同的蔬菜或豆类。有了这道菜肴,小朋友就不得不吃蔬菜咯。。。 :)


Ingredients: 材料

50g Minced Pork 肉碎 50克

4 Large Prawn (peeled & deveined, chopped) 大虾 4只,去壳剁碎

1 Egg Tofu/ bean curd 蛋豆腐 1条

1 heap tbsp Finely Shredded Carrot 胡萝卜碎 1汤匙满


(A)

1/2 tsp Sesame Oil 麻油 半小匙

Dash of White Pepper 胡椒粉 适量

1/2 tsp Oyster Sauce 蚝油 半小匙

1/2 tsp Soy Sauce 酱油 半小匙

Pinch of Sugar 细砂糖 少许

1/4 tsp Tapioca Flour 木薯粉 1/4小匙

1/4 tsp Shao Xing Hua Tiao Cooking Wine 绍兴花雕酒 1/4 小匙


(B) 

Pinch of Salt 盐 少许

1/4 tsp Sesame Oil 麻油 1/4 小匙

Dash of White Pepper 胡椒粉 少许

Pinch of Salt & White Pepper (add to taste) 盐和胡椒粉 少许


(C)

Sesame Oil to grease the mould/ steaming tray 麻油 

Some wolfberry and Chinese coriander for garnishing (optional) 枸杞和芫西 适量

Method: 步骤

1. Add (A) into minced pork, mix well. Add (B) into prawn, mix well. 
将(A)加入肉碎,搅拌均匀。将(B)加入虾,搅拌均匀。




2. Combined all ingredients except (C), mix well.
将所有材料(除C以外),混合搅拌均匀。








3. Oil the steaming tray with sesame oil.
蒸盘涂少许麻油。

4. Use a spoon, scoop the tofu mixture onto the tray. Topped with some wolfberry. (This is optional, I just like my food to looks good!)
将豆腐分别放入蒸盘,上面放枸杞装饰(也可以不放)。





5. Steam in a hot steamer for 10-12 minutes (depends on the thickness of the patties).
When it's ready, remove the tofu from the tray. Transfer the tofu on a plate, garnish with Chinese coriander and serve warm with steamed rice.

Mango Jelly 芒果果冻



Mango Jelly made with fresh, juicy and sweet mangoes. Simple preparation, gorgeous colour with no artificial colouring and you can make this into any shapes that you desired. This is a pleasant dessert that kids or even grown up will love! 






我的小朋友喜欢吃果冻,但是外边买的实在太多色素和人造香精。乘着芒果季节,就做了一些芒果果冻给他。用了新鲜又多汁的芒果打成泥,做出来的果冻颜色漂亮,存天然色素,又有芒果的香味,小朋友超爱的!


Ingredients: 材料

160g Mango Puree 芒果泥 160克

10g Konnyaku Jelly Powder 果冻粉 10克
(Redman brand)

790g Water 水 790克

1 tsp Lemon Juice 柠檬汁 1小匙

200g Sugar 细砂糖 200克

Method: 步骤

1. Prepare mango puree. Strain through a sieve, stir in lemon juice, set aside.
芒果泥过筛,加入柠檬汁,搅拌均匀。备用。





2. Mix Konnyaku jelly powder and sugar in a bowl.
果冻粉和细砂糖混合均匀。




2. Heat up water in a pot, gradually stir in (2).
将水倒入锅里,慢慢搅入(2)。




3. Stir constantly and bring to a boil. When the powder has fully dissolved, turn off heat, very quickly stir in mango puree. Mix until well combined.
继续搅拌至煮滚,果冻粉和糖完全溶解,熄火,搅入芒果泥。搅拌均匀。





4. Pour the mixture into jelly mould. Let it cooled completely, cover with cling wrap and keep chill in the refrigerator. Un-mould and serve chilled.
