All About Flour & Dry Ingredients 面粉和干的材料参考表

Finally, I am able to spare some times to make this list that I wanted to make on my first day of baking. When I was a newbies in baking, I was totally confused with the differences between cake flour, high protein flour, low gluten flour ... etc. Some of these are same but named differently and I believed many newbies are facing the same problem too.... CONFUSED! Especially with the chinese recipes. 

I had roughly list out some common dry ingredients here, just a brief one at the time being. I will update this page from time to time. :)



今天好开心,因为我终于有时间做这个了!

我小时候常常帮妈妈去邻家的店买面粉,我非常熟悉面粉有好多种,因为妈妈叫我买的都是不一样的。但是我重来不过问这些面粉的用途。

直到自己开始烘焙,问题就来了!
还记得刚开始烘焙时,我打电话问姐姐做面包的是什么粉啊?她说是高 '根' 面粉。我当时就在百货公司的粉架前面。找了好久才找到。原来叫高筋面粉。后来,我好用心的上网找资料,自己边做边研究,现在的我已经搞清楚这些材料的分别了。

我相信好多爱烘焙的新手都会面对同样的问题。有没有人在读我的食谱时看不明白?哈哈,我懂,有时google翻译的中文真的很难明白。希望这个参考表可以帮到你们啦!

  • All Purpose Flour / Plain Flour / Medium Protein Flour / Medium Gluten Flour 中筋面粉 / 普通面粉 - Use for making cakes, cookies, pastries, breads 可以做蛋糕,饼干,酥皮,面包等

  • Bread Flour / Baker's Flour / High Protein Flour / High Gluten Flour / Strong Flour 高筋面粉, 高根面粉- Use for making breads, pastries 可以做面包,酥皮等


  • Cake Flour / Low Protein Flour / Low Gluten Flour / Soft Flour  低筋面粉 - Use for making cakes, sponge cakes 可以做蛋糕,海绵蛋糕等


  • Self Raising Flour 自发粉


  • Hong Kong Flour 香港水仙粉


  • Glutinous Rice Flour 糯米粉

  • Egg White Powder / Meringue Powder 蛋白粉
